Byron Knight- Founder, Deviant & Dandy Brewery

  • Byron grew up in and around Los Angeles, California and has travelled extensively in Europe, Japan, South East Asia and the Pacific regions. He has worked as front-of-house at Shiro in Pasadena for nine years. In that time, he took the restaurant from No 46 on the Zagat list to No 1. Later he was waiter at Nobu in New York before he came to London in 2009.  When in London, Byron had the chance to open a cocktail bar on the famous Broadway Market in 2009.  The ‘Off Broadway American Cocktail Bar’ was the second cocktail bar in Hackney at the time and has gone on to be an institution amongst people in the drinks industry.

    In 2011 ByronfoundedBeavertown Brewery & the American BBQ restaurant Dukes Brew & Que.  Byron was head Chef of Duke’s and the Director ofBeavertown. He was instrumental in the sales and rapid growth of the breweryas well as being an industry personality in London for the past 10 years.  The next adventure was opening up London’s first Hawaiian restaurant featuring the now widely popular Poke dish. Byron was instrumental in laying the groundwork for the ‘poke’ trend that is taking over London.  The year 2017 has seen Byron Knight reentering the Craft Brewing arena with his latest brand ‘Deviant & Dandy Brewery’. Having ridden the first wave of Craft beer to 6 years later seeing it become a much more mature playing field is an exciting new venture for Byron.
